One Pot Vegetable Pasta
Veggie pasta made in one pot! Everything should be placed into a pot, and you are done! full of vegetables like peas, spinach, and mushrooms.
I'm prepared to keep my promises. For the rest of the month, I'll be providing you with tasty, nutritious evening meals that are also easy to prepare.Weeknight dinners are one of my New Year, New You resolutions, as I mentioned last week. You know, genuinely having a meal at a table while conversing with BL about our day while consuming wholesome, filling cuisine. The exact opposite of what occurs 80% of the time, when we wolf down cold leftovers because we are either 1) too lazy to reheat them on the stove, or 2) painfully hungry. Then, before going to night, we withdraw to our personal laptops to work in comparatively silence. It's not a pleasant picture, but the reality is what it is.
If we're being completely honest, I'm willing to guess that you are also familiar with this circumstance. Weeknight dinners frequently get put on hold when two working professionals are involved, hopefully not as frequently. Putting nutrition aside, having dinner with BL on a weeknight helps me wind down from the day.
So let's begin. Weeknight dinners for a month to get us all there.
And the biggest surprise of all: spaghetti is our first course.
I'm aware that I'm a little behind the curve, but I wasn't sure how I felt about all the one-pot pasta that was all over Pinterest in 2017. The thought of "throwing everything in a pot and you're done" appealed to me, but I wasn't sure it would turn out to be anything special.
You are all aware of how seriously I take my pasta.
But I decided to give it a go to actually make weekday meals happen rather than just pretending to do them before ordering takeout.
It's PINTEREST all the way. I regret ever rolling my eyes at one-pot spaghetti. These infants are incredible!
You're done after you throw it in. Done done. In the same way that you would genuinely clean your home while dinner is cooking. (BL, don't get too excited; it's just a suggestion.)
This meal is overflowing with flavor and loaded with vegetables, much like pasta primavera.
This dish's adaptability is what I like about it the best. You don't enjoy mushrooms. substitute broccoli or zucchini! monitoring calories? Remove or lessen the final spray of cream.
Whatever your objectives, I can assure you that this dish will be one you return to repeatedly.
Other than the pasta, I believe the frozen green peas are my favorite component of this dish. I will find any justification to include green peas in pasta because I adore them so much.
The abundance of vegetables also increases the nutritional value of this pasta. In other words, a cup or two of pasta isn't truly a cup or two of noodles. Reduce the amount of pasta and increase the number of veggies to increase the nutritious density even further.
